This salad is light enough in calories to be a fasting-day lunch or main meal.

Greek cous cous salad

Recipe for Greek Cous Cous salad (serves 1)

2 tsps oil
100g zucchini/courgettes, sliced or diced, depending on size
50g onion, diced
oregano and thyme, to taste
¼ cup cous cous
2 large olives, pitted and sliced
25g feta, cubed
2 tomatoes, diced
ground pepper

Total calories per serving: 300

Method: Heat the oil in a pan and stir in the onion and courgettes. Cook on a lowish heat until soft, stirring in the herbs towards the end of the cooking time. Meanwhile, boil some water and add a cup of it to the cous cous. Stir the cooked vegetables into the cous cous and allow it to cool before adding the feta, olives, tomatoes and ground pepper.
