Tuna QuesadillaRecipe for Tuna Quesadilla (serves 2)

1 can solid white tuna (in water), drained and flaked 70
50g Cheddar 43
2 wholewheat tortillas 167
pinch alfalfa sprouts 1

Total calories per serving: 280

Method: Heat a frying pan on a medium heat and lay one of the tortillas in the pan. Spread the tuna over the tortilla and cover it with the grated cheese and the other tortilla. Heat for around 3 minutes, or until the cheese has melted and the bottom of the quesadilla is lightly browned. Press down on the top tortilla and carefully turn the whole quesadilla over, to brown the other side. Slide the quesadilla onto a plate and cut into eight segments. Serve with a pinch of sprouts or a small salad.
