Puy Lentil Stew
This homely, wholesome, stew is a complete meal in itself for a fasting day, but you can also serve it with rice, with flatbreads or as a side dish.

Recipe for Puy lentil stew (serves 4)

85g (3 small) carrots, sliced 9

½ cup/125ml white wine 24
400g tomatoes (fresh or canned), blended to a purée 18
1 cup Puy/green lentils, rinsed 170

Total calories per serving: 255

Method: Heat the oil in a pan and add the onion, carrot and garlic, cooking until the onion is translucent. Add in the wine and cook until most of it has evaporated. Then add the blended tomatoes, lentils, and seasoning. You can add chilli or curry powder or paprika if you’d like a bit more heat. Simmer until the lentils are soft – about an hour for green lentils. Add water if the mixture gets too dry.
